vegan superfood pancakes

Hello, it feels like such a long time since I have been posting recipes on my blog. To celebrate Pancake Day (shrove Tuesday), I have teamed up with Bioglan to create these super delicious, superfood vegan pancakes. I find pancakes  really fun to make, you can really play around with ingredients and toppings, and you can make them as healthy (or unhealthy) as you want by switching some of the ingredients around. 


INGREDIENTS:

  • 2 cups all purpose flour

  • 3 tsp chia + flax + extra for dusting (by Bioglan)

  • 3 tsp berry burst super greens powder (by Bioglan)

  • 1 1/2 cups rice milk

  • 2 tbsp agave nectar + extra for drizzling

EXTRA INGREDIENTS:

  • Banana slices

  • Fresh raspberries

  • Fresh blueberries

  • Almond butter

  • Coconut + almond + lucuma raw bites (by Bioglan)

  • Coconut oil


METHOD:

  1. Place the flour along with the chia + flax, super green powder and stir to combine all of the ingredients together (the chia & flax seeds will act as a binding ingredient)

  2. Pour the rice milk over the dry ingredients and whisk together making sure the batter is lump free.

  3. Add the agave nectar and stir to coming the sweetness to the batter.

  4. Bring a non-stick pan to medium heat, add some coconut oil and allow it to melt.

  5. When the oil is hot, pour some of the batter into the pan and cook the pancakes for approximately 1-2 minutes on each side.

  6. Serve the pancakes with the fresh fruit, raw bites, almond butter, dust with extra chia + flax and drizzle with agave syrup.
