Vegan Caramelised banana & almond butter on toast

Hello, I decided I wanted to share this amazing breakfast with you guys… It’s quick, easy and super delicious.

For this recipe I have used almond butter, but you can swap for any nut butter! I like eating Meridian nut butters because they are 100% natural and without any added extras like sugar, oils and salt.

This recipe is packed with healthy proteins.


To make this delicious breakfast you will need the following:

  • 1 1/2 bananas (one for caramelising and 1/2 for banana stars)

  • 2 slices of wholemeal vegan bread

  • Almond butter (you can use as little or a much as you like, the quantity is entirely up to you)

  • Chocolate coated mulberries (by The Raw Chocolate Company)

  • Chia seeds (I used Chia Bia – chia, apple and cinnamon mix)

  • 1tbp coconut oil (I used The Groovy Food Company)


METHOD:

  1. Begin by bringing a non-stick pan to medium heat and melt the coconut oil, peel and slice the banana through the centre and in half – you will end up with 4 pieces of banana.

  2. Place the banana slices in the pan and caramelise in the coconut oil, making sure to turn occasionally.

  3. Place the slice of bread in the toaster and toast until you are happy with it.

  4. Spread the almond butter, dust with the chia seeds, place the caramelised banana over the slice of toast and add some of the chocolate coated mulberries.

  5. Cut some banana stars and place over the toast (if you don’t have a cutter maybe slice the banana and cut the slices in quarters)
