No Bake Vegan Protein Bars
(makes 20 squares)
- 500g oats
- 500g 100% peanut butter
- 2 scoops Neat Nutrition chocolate vegan protein
- 100g sesame seeds
- 4 heaped tablespoon chia seeds
- 80g chopped walnuts
- 1 cup dairy-free milk
- 150ml coconut oil
- ¼ cup maple syrup
- 80g pitted dates (soaked in hot water)
- 2 heaped tablespoon cacao powder
- Desiccated coconut
Place all ingredients into a large mixing bowl and combine them using your hands -make sure all of the ingredients are well combined.
Place cling film into a large tray and transfer the mixture into the tray. Pat down the edges, moving into the centre, to make sure the mixture is compacted.
Place in the fridge for approximately 6 hours then remove and cut into snack squares.
To make the chocolate sauce, drain the water from the soaked dates and place them into a food processor along with the cacao powder. Pulse the ingredients to create the chocolate sauce.
Spread the chocolate over the snack squares and sprinkle with desiccated coconut.
