Orange and Polenta Bundt Cake


  • 1 flax egg (1 tbsp ground flaxseeds and 3-4 tbps warm water)

  • 200g oat flour

  • 100g polenta

  • 2tsp baking powder

  • 1 cup coconut sugar

  • 2 oranges (zest and juiced)

  • ½ cup olive oil

  • 1 cup soya milk

  • Icing sugar (optional), I used Sukrin Icing Sugar Alternative


  1. Begin by pre-heating the oven to 180C degrees.

  2. Prepare the flax egg, by combining the ground flaxseeds with the warm water, set aside while you prepare the cake batter.

  3. Using a powerful blender or food processor, make your own oat flower by pouring the oats into the food processor container and pulse until the oats turn into flour.

  4. Sieve the oat flour into a large mixing bowl and pour the polenta, baking powder and coconut sugar, whisk together to combine the dry ingredients together.

  5. Begin by adding the olive oil, orange zest and juice and the soya milk and slowly form the cake batter by combining the ingredients together.

  6. Add the flax egg and mix the batter further.

  7. Pour the cake batter into a greased Bundt tin and place in the oven ready for baking.

  8. Bake for approximately 25-30 minutes.

  9. Once the cake has finished baking, allow it to cool for a good 15-20 minutes before removing it from the tin.
